Top winter warmer soups suitable for Thermos flasks - Black+Blum

As the chilly months blow in, we’re looking to more hearty, warming meals to take away the chill. What can be better at this time of year than a winter warmer soup?

Cheap and easy to make, these delicious soups use the best winter produce, can be prepared on bulk and are easily transported via your trusted Thermo Pot or Food Flask. You can then enjoy it during your lunch break, or even on a brisk, bristling hike. Here are our favourite winter soup recipes:

Leek and potato soup

Leek and Potato Soup

Hearty and delicious, this classic soup will keep you full right through to dinner. This recipe serves four so it can be prepared on a Sunday or Monday and taken for lunch throughout the week.

Ingredients

  • 50g butter
  • 2 cloves chopped garlic
  • 1 small chopped onion (can be white or red, depending on preference)
  • 3 large chopped leeks
  • 3 medium potatoes, peeled and diced
  • 900ml stock (can be chicken or veg, depending on preference)
  • small handful chopped fresh parsley
  • Salt and freshly ground black pepper

Melt the butter into a large saucepan and saute the garlic and onions over a medium heat for a few minutes, stirring frequently.

Add the remaining ingredients and bring everything to the boil. Simmer for 30 minutes. Puree the soup with a hand blender until it is the texture and consistency you desire. If the soup is too thin, add cornflour to thicken. Season to taste.  

Make this soup vegan by using olive oil instead of butter.

Sweet potato and butternut squash soup

Sweet Potato and Butternut Squash Soup

Swap out the butternut squash for any winter squash to make this winter warmer the perfect seasonal lunch partner.

Ingredients

  • 1 squash of your desire, peeled, deseeded and diced (keep the seeds to roast with some spices and honey for a healthy snack)
  • 1 sweet potato, peeled and diced
  • 2 carrots, peeled, trimmed and sliced
  • 6 shallots, peeled and sliced
  • 1 fennel, chopped
  • 1 vegetable stock cube
  • 2 cloves chopped garlic
  • 4 tablespoons of parsley for garnish

Half-fill a large pan with water and bring to the boil. Add the squash, sweet potato, carrots, shallots, fennel and stock cube and bring back to the boil. Then simmer for 10-12 minutes on a lower heat.

From here, remove the pan from the heat and add garlic. Allow to cool, then remove the vegetables and place in a separate bowl. Using a hand blender, blend half of the stock with the vegetables to your preferred consistency. If you like your soup chunkier, keep some of the vegetables aside and add them back into the soup mix after blending. Garnish with parsley.

Broccoli and Stilton Soup

Broccoli and salty stilton are the perfect couple in this indulgent classic. This recipe serves six, so it’s the perfect all-week treat to take to work in your Thermo Pot. You’ll even have a portion left over to share with your lunchtime buddy (sharing is optional!).

Ingredients

  • 1 onion, diced
  • 1 tablespoon of olive oil
  • 2 chopped broccoli
  • 2 chopped and peeled potatoes
  • 1L chicken stock
  • 100g stilton cheese

Place the onions in a large pan and cook with the olive oil over medium heat until translucent. Stir in the broccoli and potatoes and cook until vegetables begin to release their moisture. Pour in the chicken (or veg) stock and bring to the boil. Then reduce heat and simmer for about 20 minutes until vegetables are tender. Remove from the heat and let the mixture cool slightly. Stir in the cheese until melted.

Puree the soup with a hand blender. Enjoy!

carrot and coriander soup

Carrot and coriander spicy soup

This simple, easy, tasty and cheap, this British favourite is perfect for any season.

Ingredients

  • 2 large onions, diced
  • 1 tablespoon of olive oil
  • 500g peeled and chopped carrots
  • 2 cloves garlic
  • 1 big red chilli, finely chopped
  • 400g tinned plum tomatoes
  • 500ml vegetable stock
  • 1 bunch chopped fresh coriander (or 1 teaspoon dried)
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon Worchester sauce
  • Salt and black pepper to season

Heat the olive oil in a large pan over a medium heat. Cook the onions, garlic, chilli and carrots until the carrots are tender - this usually takes between 5 and 10 minutes. Mix in the tin of tomatoes, vegetable stock and ½ the coriander. Add the balsamic vinegar and Worcester sauce to taste. Bring to the boil and then  reduce the heat and leave to simmer for 30 minutes.

Once cooked through, remove from the heat and blend until smooth.

Red lentil soup

Red Lentil soup

Lentil soup is hearty but healthy and better yet, it’s simple and easy to throw together.

Ingredients

  • 1 tablespoon of olive oil
  • 1 large, diced carrot
  • 2 large sticks of diced celery
  • 1 small yellow onion
  • ¼ teaspoon of salt (you can add more to taste)
  • 1 cup red lentils
  • 4 cups of water or low-sodium broth
  • 1 whole bay leaf
  • 2 tablespoons of lemon juice (½ large lemon)
  • Olive oil or yoghurt for a fancy finish

Heat the olive oil in a medium pan over a medium heat. Cook the carrot, celery, onion and ¼ teaspoon salt. Stir all ingredients together and then cover and let the vegetables sweat for around five minutes until the onions are soft.

Add the lentils, water or broth and the bay leaf. Bring up to the boil, then turn the heat down low and let the mixture simmer for about 20 minutes. By this point, the lentils will begin to fall apart and will have turned a gorgeous golden colour.

Turn off the heat and stir in the lemon juice and salt to taste. This soup can be kept for up to five days. Perfect for a week of warm and filling lunches.
